rhubarbopolitan

Matt invented a new cocktail tonight, using up some spare cooked rhubarb from last night's rhubarb fool to create ... the Rhubarbopolitan! It's an inprovement on the Cosmopolitan we think. The rhubarb gives the drink a sweeter depth, and makes it beautifully more opaque and pink.

Rhubarbopolitan

40 ml citrus vodka 15ml Cointreau 10ml lime juice 10ml cranberry juice 10ml rhubarb purée (cook some rhubarb with sugar and a little ginger for 15 minutes) Flamed orange peel for garnish

Shake all the ingredients with ice. Strain into a chilled martini glass. Garnish with flamed orange peel.
